The 'Melt In Your Mouth' French Toast

CHERRY REDUCTION
1 cup cherries
3 tbsp AKKA balsamic vinegar
1 tbsp freshly cracked black pepper
2 tbsp maple syrup
1/2 tbsp butter
4 drops vanilla extract
1 tsp lemon zest
THE TOAST
2 eggs
1/2 cup milk
2 tsp cinnamon
2 tbsp white sugar
4 thick slices of brioche toast
4 tbsp butter
1 pack mascarpone
PREPARATION:
Start with your cherries.
Melt 1/2 tbsp butter in a pan on medium low heat, then add the cherries, maple syrup, AKKA balsamic, vanilla extract, and black pepper. Let simmer until the cherries release their juices and the sauce starts to thicken. Add the lemon zest. Switch off the heat and allow it to cool.
For the toast...
Whisk the eggs, milk, cinnamon, and sugar in a bowl, and dip each toast to coat both sides thoroughly. In another pan, melt remaining butter on medium heat. Place your soaked brioche on the hot butter and cook on each side for 2-3 minutes or until golden. Place on a plate lined with paper towels to remove excess butter.
Serve with a big spoonful of mascarpone cheese on top and drench with your beautifully sweet tangy AKKA cherry reduction.
